fresh blueberries

shredded cheese (cheddar or dairy-free)
Cheddar is recommended.

cream cheese (or dairy-free cream)

butter or cooking spray

Instructions
Preparation
Heat a skillet over medium heat and add butter or cooking spray.
Spread cream cheese on one half of each tortilla.
Top with blueberries and sprinkle shredded cheese over the blueberries.
Fold the tortillas in half to create quesadillas.
Place the quesadillas in the skillet and cook until golden brown and the cheese is melted, about 3-4 minutes per side.
Serve warm, optionally alongside fruit or coffee.
Notes
Store leftover quesadillas in an airtight container in the fridge for up to 3 days. For reheating, use a skillet over low heat or microwave.
