  • 4 pieces flour tortillas Can substitute with whole wheat or corn tortillas.
  • 1 cup fresh blueberries
  • 1 cup shredded cheese (cheddar or dairy-free) Cheddar is recommended.
  • 1/2 cup cream cheese (or dairy-free cream)
  • 1 tablespoon butter or cooking spray For frying.

Instructions

Preparation

  • Heat a skillet over medium heat and add butter or cooking spray.
  • Spread cream cheese on one half of each tortilla.
  • Top with blueberries and sprinkle shredded cheese over the blueberries.
  • Fold the tortillas in half to create quesadillas.
  • Place the quesadillas in the skillet and cook until golden brown and the cheese is melted, about 3-4 minutes per side.
  • Serve warm, optionally alongside fruit or coffee.

Notes

Store leftover quesadillas in an airtight container in the fridge for up to 3 days. For reheating, use a skillet over low heat or microwave.
