Instructions
Preparation
Rinse the quinoa under cold water. Combine it with the vegetable broth in a pot.
Bring to a boil, then reduce heat to low, cover, and simmer for approximately 15 minutes or until fluffy.
Cooking
While the quinoa cooks, heat olive oil in a skillet over medium heat.
Add the sliced onion and bell pepper, sautéing until tender, which should take about 5-7 minutes.
Stir in the black beans along with chili powder, cumin, salt, and pepper. Cook for another 3-4 minutes until everything is heated through.
Serving
Serve the fluffy quinoa in bowls, topped with the sautéed vegetable and black bean mixture.
Garnish with chopped cilantro and add lime wedges on the side for an extra zing!
Notes
Store leftovers in an airtight container in the refrigerator for up to three days. For best results, reheat with a splash of water to keep moisture.
