Ingredients

Main ingredients

  • 1 cup quinoa Rinse before cooking
  • 1 can black beans, rinsed and drained
  • 1 cup corn (fresh or frozen)
  • 1 medium bell pepper, diced
  • 1 medium avocado, sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • 1/4 cup fresh cilantro, chopped
  • to taste salt and pepper

Dressing

  • 1/4 cup hummus
  • 1 medium juice of lime
  • 1 tablespoon olive oil

Instructions

Preparation

  • Rinse the quinoa under cold water.
  • In a pot, combine the quinoa and 2 cups of water. Bring to a boil, then reduce the heat and let it simmer for about 15 minutes until the water is fully absorbed.

Mixing

  • In a large bowl, mix together the cooked quinoa, black beans, corn, diced bell pepper, avocado, cherry tomatoes, red onion, and cilantro.

Dressing

  • In a separate small bowl, combine the hummus, lime juice, olive oil, salt, and pepper to create your dressing.
  • Drizzle the dressing over the quinoa mix and toss everything gently to combine.

Serving

  • Serve immediately or store in the refrigerator for meal prep.

Notes

Store leftovers in an airtight container in the fridge for up to three days. Can freeze portions for longer storage.
