Instructions
Preparation
Rinse the quinoa under cold water.
In a pot, combine the quinoa and 2 cups of water. Bring to a boil, then reduce the heat and let it simmer for about 15 minutes until the water is fully absorbed.
Mixing
In a large bowl, mix together the cooked quinoa, black beans, corn, diced bell pepper, avocado, cherry tomatoes, red onion, and cilantro.
Dressing
In a separate small bowl, combine the hummus, lime juice, olive oil, salt, and pepper to create your dressing.
Drizzle the dressing over the quinoa mix and toss everything gently to combine.
