Ingredients
For the Bowls
1canchickpeas, drained and rinsed
1/2cupBBQ sauce
1cupcooked quinoa
1cupfire-roasted corn (canned or frozen)
1/2cuppickled red onions
1cupsharp cheddar cheese, shredded
1/2cupplain yogurt
1tablespoonranch seasoning
to tasteSalt and pepper
Fresh cilantro for garnish (optional)

Preparation
Preheat the oven to 400°F (200°C).
In a mixing bowl, combine the chickpeas and BBQ sauce, tossing until they are fully coated. Spread them on a baking sheet.
Place the chickpeas in the oven and roast for 20 minutes until they’re nicely crispy.
While the chickpeas roast, in a separate bowl, mix the cooked quinoa with fire-roasted corn for added texture.
In a small bowl, combine the yogurt and ranch seasoning, seasoning with salt and pepper to taste.
In serving dishes, layer the quinoa and corn mixture, then top with roasted chickpeas, pickled red onions, and shredded cheddar. Drizzle the ranch dressing over the top and garnish with cilantro if you like.
