  • 200 g feta cheese
  • 2 cups cherry tomatoes
  • 2 cups fresh spinach
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • Fresh parsley for garnish

Instructions

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a baking dish, place the feta cheese in the center and surround it with cherry tomatoes and spinach.
  • Drizzle with olive oil and sprinkle with salt, black pepper, and oregano.
  • Crack the eggs over the vegetables and feta.
  • Bake in the preheated oven for 15-20 minutes or until the eggs are set.
  • Remove from the oven and garnish with fresh parsley before serving.
