Main Ingredients

  • 1 cup cooked rice Use any type of cooked rice
  • 1 can chickpeas, drained and rinsed Make sure to rinse well
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese Use nutritional yeast for a vegan option
  • 2 tablespoons olive oil Plus more if needed for dryness
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste salt and pepper
  • for garnish Parsley (optional) Chopped fresh parsley works well

Instructions

Preparation

  • Preheat the oven to 400°F (200°C).
  • In a bowl, mash the chickpeas with a fork until mostly smooth.
  • Add the cooked rice, breadcrumbs, Parmesan cheese, olive oil, garlic powder, onion powder, salt, and pepper to the bowl, mixing until well combined.
  • Form the mixture into small balls and place them on a baking sheet lined with parchment paper.
  • Bake for 20-25 minutes or until golden brown, turning halfway through.
  • Garnish with parsley if desired and serve warm.

Notes

Store in an airtight container in the refrigerator for up to five days. They can also be frozen and reheated at 375°F (190°C) until heated through.
