Instructions

Preparation

  • In a large pot, heat the olive oil over medium heat.
  • Add the chopped onion, carrots, and celery; sauté until softened, about 5 minutes.
  • Stir in the minced garlic and cook for an additional minute.
  • Pour in the vegetable broth and bring the mixture to a simmer.
  • Add the diced tomatoes, green beans, corn, dried thyme, and oregano.
  • Allow the soup to simmer for approximately 10 minutes, or until the vegetables are tender.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with fresh parsley.

Notes

This soup can be enjoyed on its own or paired with crusty bread or a light salad. You can also customize it by adding other vegetables or herbs you have on hand.
