Zucchini Lasagna

A healthy twist on the classic Italian lasagna made with layers of zucchini, marinara sauce, and creamy ricotta, perfect for family dinners or gatherings.

Ingredients

For the lasagna

  • 1.5 large large zucchinis, thinly sliced lengthwise Pat dry to remove excess moisture.
  • 1 tablespoon olive oil For sautéing.
  • 1 pound ground beef Can substitute with ground turkey.
  • 1.5 cups low-carb marinara sauce To reduce carbohydrates.
  • 2 teaspoons salt Divided use.
  • 1 teaspoon dried oregano
  • 0.5 teaspoon ground black pepper
  • 1 container (8 ounces) ricotta cheese
  • 1 large egg
  • 0.5 teaspoon ground nutmeg
  • 2 cups shredded mozzarella cheese
  • 0.25 cup grated Parmesan cheese
  • 1 piece aluminum foil For covering the baking dish.

Instructions

Preparation

  • Preheat the oven to 375°F (190°C). Grease an 8-inch square baking dish with cooking spray.
  • Pat dry the zucchini slices with a paper towel to remove any excess moisture. Set aside.
  • Heat the olive oil in a saucepan over medium-high heat. Add the ground beef and cook until browned, about 5 to 8 minutes.
  • Stir in the marinara sauce, 1 teaspoon of salt, oregano, and pepper; let simmer for 10 minutes. Remove from heat and set aside.
  • In a separate bowl, combine the ricotta cheese, egg, 1 teaspoon of salt, and nutmeg; mix well and set aside.

Assembly

  • Begin layering by arranging one layer of zucchini slices at the bottom of the greased baking dish.
  • Cover with half of the meat sauce.
  • Add another layer of zucchini slices followed by a layer of the ricotta mixture. Sprinkle with half of the mozzarella cheese.
  • Repeat with another layer of zucchini slices, the remaining meat sauce, and top with the remaining mozzarella and Parmesan cheese.

Baking

  • Cover the baking dish with aluminum foil to retain moisture.
  • Bake in the preheated oven for 30 minutes.
  • Remove the foil and bake for an additional 15 minutes, or until the top is golden.
  • Allow to cool slightly before serving.

Notes

Leftovers can be stored in an airtight container in the refrigerator for 3-4 days. For longer preservation, freeze in freezer-safe containers for up to 3 months. Reheat in an oven at low temperature or microwave before serving.
