Ingredients

Dough Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 1 packet instant yeast
  • 1/2 teaspoon salt
  • 1/2 cup almond milk (or any plant-based milk)
  • 1/4 cup vegan butter, melted
  • 1 tablespoon lemon zest

Filling and Icing

  • 1/2 cup homemade lemon curd
  • 1 cup powdered sugar (for icing)
  • 2 tablespoons lemon juice (for icing)

Instructions

Preparation

  • In a bowl, mix together the flour, sugar, instant yeast, and salt.
  • Add the warm almond milk and melted vegan butter to the dry ingredients and stir until combined.
  • Knead the dough on a floured surface for about 5-7 minutes until smooth.
  • Let the dough rise in a warm place for about 1 hour or until it has doubled in size.

Baking

  • Preheat the oven to 375°F (190°C).
  • Roll out the dough into a rectangle and spread a thin layer of lemon curd on top.
  • Roll the dough tightly and slice it into rolls.
  • Place the rolls in a greased baking dish and let them rise for another 30 minutes.
  • Bake for 20-25 minutes or until golden brown.
  • For the icing, mix powdered sugar with lemon juice and drizzle over the warm rolls before serving.

Notes

Store the vegan lemon sweet rolls in an airtight container at room temperature for up to three days or freeze for up to a month. For best results, ensure your yeast is fresh.
