1packetinstant yeast

1/2cupalmond milk (or any plant-based milk)
1/4cupvegan butter, melted
1tablespoonlemon zest
Filling and Icing
1/2cuphomemade lemon curd
1cuppowdered sugar (for icing)
2tablespoonslemon juice (for icing)
Instructions
Preparation
In a bowl, mix together the flour, sugar, instant yeast, and salt.
Add the warm almond milk and melted vegan butter to the dry ingredients and stir until combined.
Knead the dough on a floured surface for about 5-7 minutes until smooth.
Let the dough rise in a warm place for about 1 hour or until it has doubled in size.
Baking
Preheat the oven to 375°F (190°C).
Roll out the dough into a rectangle and spread a thin layer of lemon curd on top.
Roll the dough tightly and slice it into rolls.
Place the rolls in a greased baking dish and let them rise for another 30 minutes.
Bake for 20-25 minutes or until golden brown.
For the icing, mix powdered sugar with lemon juice and drizzle over the warm rolls before serving.
