  • 2 cups kale, chopped Sauté until wilted.
  • 2 cloves garlic, minced Sauté until fragrant.

Chickpea Mixture

  • 1 can chickpeas, rinsed and drained Provides protein.
  • 2 tablespoons peanut butter For creaminess.
  • 2 tablespoons soy sauce Or substitute with tamari for gluten-free.
  • 1 tablespoon lime juice For freshness.
  • 1 teaspoon ginger, minced For flavor.
  • to taste Salt and pepper Adjust according to preference.
  • Oil for sautéing Use your preferred cooking oil.

Preparation

  • Start by cooking the white rice according to the package instructions.
  • In a pan, heat some oil over medium heat, and sauté the garlic until it becomes fragrant.
  • Add the chopped kale to the pan and continue sautéing until it wilts down.
  • In a separate bowl, combine the chickpeas with peanut butter, soy sauce, lime juice, and minced ginger until well mixed.
  • Cook the chickpeas mixture in a pan for roughly 5 minutes, or until heated through.
  • To assemble your bowl, place a base of rice, topped with the sautéed kale and the peanut chickpeas.
  • Season with salt and pepper to taste before serving.

Notes

For presentation, layer the ingredients beautifully and garnish with sesame seeds or sliced avocado for extra flair. Store leftovers in separate airtight containers to maintain freshness.
