  • 3 lbs beef chuck roast Ideal cut for tenderness
  • 2 cups beef broth Use a good-quality broth for maximum flavor
  • 1 cup carrots, chopped Feel free to swap for preferred vegetables
  • 1 cup potatoes, chopped You can also use parsnips or turnips
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tbsp Worcestershire sauce
  • 2 tsp salt
  • 1 tsp black pepper
  • 1 tsp dried thyme
  • 1 tsp dried rosemary

Instructions

Preparation

  • In a large skillet, heat olive oil over medium-high heat.
  • Season the chuck roast with salt, pepper, thyme, and rosemary.
  • Sear the roast on all sides in the skillet until browned, about 4-5 minutes per side.
  • Transfer the roast to a slow cooker.
  • Add chopped onions, carrots, and potatoes around the roast.
  • Pour in beef broth and Worcestershire sauce.

Cooking

  • Cover and cook on low for 8-10 hours or until the meat is tender.
  • Once cooked, shred the beef and serve with vegetables and broth.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Reheat using a saucepan over low heat, adding a splash of broth to retain moisture. Let the meat rest before slicing to preserve its juices.
