Dry Ingredients

rolled oats

almond flour
Can be substituted with oat flour for gluten sensitivity.

protein powder

Wet Ingredients

peanut butter or almond butter

maple syrup or agave nectar
Can be reduced for less sweetness.

Instructions
Preparation
Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine the rolled oats, almond flour, protein powder, and baking soda.
In another bowl, mix together the peanut butter, maple syrup, and vanilla extract until smooth.
Pour the wet ingredients into the dry ingredients and stir until combined.
If desired, fold in chocolate chips or nuts at this stage.
Scoop tablespoon-sized portions of dough onto a baking sheet lined with parchment paper.
Baking
Bake for 10-12 minutes, or until the cookies are golden.
Let them cool before serving.
Notes
For best results, measure ingredients accurately. Store in an airtight container at room temperature for up to one week or freeze for longer storage.
