Instructions
Preparation
Switch the Instant Pot to SAUTE MODE for 5 minutes. Once hot, add a bit of oil.
Add finely chopped onions and minced garlic; sauté for about a minute until fragrant.
If using additional veggies, add them now and sauté lightly. You can remove them before adding spinach puree if preferred.
Stir in the spinach puree or finely chopped fresh spinach along with any sweet corn if desired.
Add your pasta, followed by the appropriate amount of water—1¾ cups if using puree and 2 cups if using chopped spinach.
Cancel SAUTE mode, secure the lid, and switch to PRESSURE COOK mode for 4 minutes.
Finishing Touches
Once done, do a quick release of the pressure and carefully open the lid.
Mix in cream, black pepper, Italian herbs, and grated cheese to taste; stir until combined.
Serve hot for a truly comforting dish.
Notes
To keep leftovers fresh, store in an airtight container in the fridge for up to 3 days. Reheat with a splash of water or extra cream as needed.
