  • 1 cup shredded cheddar cheese
  • 4 cloves garlic, minced
  • 1 tablespoon olive oil

  • In a large skillet, heat the olive oil over medium heat. Season the chicken breasts with salt and pepper and cook them until golden brown and thoroughly cooked, approximately 6-7 minutes per side. Remove the chicken from the skillet and set aside.
  • In the same skillet, add the minced garlic and sauté for 1-2 minutes until fragrant.
  • Stir in the heavy cream and bring to a gentle simmer. Add the shredded cheddar cheese and stir until melted and the mixture is creamy.
  • Introduce the diced potatoes to the skillet and cook until tender, about 10-15 minutes.
  • Slice the cooked chicken and return it to the skillet, mixing it well with the creamy mixture and potatoes.
  • Garnish with fresh parsley before serving.

Notes

For added freshness, pair with a side salad or steamed vegetables. To keep leftovers fresh, store in an airtight container in the refrigerator for up to three days. Reheat gently in a skillet over low heat with a splash of cream.
