  • 4 cups chicken broth
  • 2 cups mixed vegetables (carrots, spinach, zucchini) Frozen vegetables can be used, ensure thawed.
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme Fresh herbs like parsley or basil can be added before serving.
  • 1 leaf bay leaf Remove before serving.
  • 1 tablespoon olive oil

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onion and minced garlic, sautéing until softened and fragrant.
  • Stir in the diced chicken and cook until lightly browned on all sides.
  • Pour in the chicken broth and bring the mixture to a lively boil.
  • Add the mixed vegetables, salt, pepper, thyme, and bay leaf, stirring well.
  • Reduce the heat and allow the soup to simmer for about 20 minutes, until the chicken is thoroughly cooked and the veggies are tender.
  • Before serving, remember to remove the bay leaf.
  • Enjoy your hot bowl of soup!

Notes

Serve with crusty bread or a simple green salad. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze the soup in freezer-safe containers. Reheat on the stove or in the microwave until heated through.
