Ingredients

Main ingredients

  • 1 cup quinoa Rinsed before cooking
  • 2 cups vegetable broth or water Used for cooking quinoa
  • 1 can black beans, rinsed and drained
  • 1 can corn, drained
  • 1 medium bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1 medium avocado, diced Added before serving
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Optional protein (chicken, beef, tofu, etc.) Customize as desired

Instructions

Cooking Quinoa

  • Rinse the quinoa under cold water.
  • In a saucepan, combine the rinsed quinoa and vegetable broth or water.
  • Bring the mixture to a boil, then reduce to a simmer, cover, and cook for about 15 minutes or until the quinoa is fluffy.

Combining Ingredients

  • In a large bowl, mix the cooked quinoa with black beans, corn, bell peppers, tomatoes, and spices. Stir well to combine.
  • If using, prepare your chosen protein separately and mix it into the bowl after cooking.

Serving

  • Divide the mixture into meal prep containers.
  • Top each bowl with diced avocado before serving.

Notes

For best results, rinse quinoa thoroughly before cooking to remove its natural coating, which can make it taste bitter. Customize your spices to match your taste, and consider using any vegetables you have on hand.
