  • 1 lb ground turkey Can use ground chicken as an alternative.
  • 1 small onion, chopped
  • 1 medium bell pepper, diced Use sweet bell pepper for milder flavor.
  • 1 can black beans, drained and rinsed Pat dry to avoid excess water.
  • 1 can diced tomatoes Fire-roasted tomatoes can be used for a smoky flavor.
  • 1 packet taco seasoning Use mild taco seasoning for a milder dish.
  • 1 cup shredded cheddar or Mexican-blend cheese Shred from a block for better melting.
  • to taste salt and pepper
  • 1 tablespoon olive oil For cooking.

Instructions

Preparation

  • Heat a small drizzle of olive oil in a large skillet over medium heat.
  • Add the chopped onion and diced bell pepper. Cook for 3 to 4 minutes, stirring occasionally, until they begin to soften.

Cook the Turkey

  • Add the ground turkey. Break it apart with a wooden spoon and cook until browned and no longer pink, about 5 to 6 minutes.

Combine and Simmer

  • Stir in the drained black beans, diced tomatoes, and taco seasoning.
  • Reduce the heat slightly and simmer for 5 to 7 minutes. Stir occasionally so the mixture thickens and the flavors meld.
  • Taste and adjust with salt and pepper.

Finishing Touches

  • Sprinkle the shredded cheese evenly over the top. Cover the skillet for 1 to 2 minutes, until the cheese melts.
  • Serve hot with warmed tortillas and any desired toppings.

Notes

Ground turkey should reach 165°F in the thickest part for safe eating. The filling is versatile and can be served in tortillas, over rice, or on greens. Leftovers can be stored for 3-4 days in the refrigerator or frozen for up to 3 months.
