Greek Turkey Meatball Bowls

Ingredients

For the meatballs

  • 1 lb Ground turkey
  • 2 cloves Garlic, minced
  • 1/4 cup Fresh parsley, chopped
  • 1 tsp Oregano
  • 1 tsp Salt
  • 1/2 tsp Pepper

For the tzatziki sauce and assembly

  • 1 cup Greek yogurt
  • 2 tbsp Lemon juice
  • 2 tbsp Fresh dill, chopped
  • 1 tbsp Olive oil
  • 1 cup Cucumbers, chopped
  • 1/2 cup Red onions, sliced
  • 1/2 cup Kalamata olives

Instructions

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a bowl, combine the ground turkey, minced garlic, chopped parsley, oregano, salt, and pepper. Mix until well-combined and then shape into meatballs.

Cooking

  • Place the meatballs on a baking sheet and bake for about 20 minutes or until cooked through.
  • While the meatballs bake, prepare the tzatziki sauce by blending Greek yogurt, lemon juice, chopped dill, and a drizzle of olive oil.

Assembly

  • Chop your cucumbers, slice the red onions, and prepare the Kalamata olives.
  • Assemble your bowls by adding meatballs, cucumbers, red onions, and olives, then drizzle with tzatziki sauce.
  • Serve immediately or store for later!

Notes

For better texture in your meatballs, consider adding breadcrumbs soaked in milk. Using fresh herbs is advised for better flavor.
