Ingredients

Marinade

  • 4 pieces Chicken breasts Skinless and boneless
  • 2 tablespoons Olive oil
  • 2 tablespoons Lemon juice Freshly squeezed
  • 2 cloves Garlic Minced
  • 1 teaspoon Oregano Dried
  • 1 teaspoon Salt
  • 1 teaspoon Pepper

Fresh Ingredients

  • 1 cup Cucumber Chopped
  • 1 cup Tomato Chopped
  • 1 cup Red onion Chopped
  • 1/2 cup Feta cheese Crumbled
  • 1 cup Tzatziki sauce For drizzling
  • 2 cups Rice or quinoa Cooked according to package instructions

Instructions

Preparation

  • In a bowl, mix together the olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Allow the chicken breasts to marinate in this mixture for at least 30 minutes.
  • Grill or pan-cook the marinated chicken until fully cooked, roughly 6-7 minutes per side.
  • Cook the rice or quinoa according to package instructions while the chicken is cooking.
  • Prepare your fresh vegetables by chopping the cucumber, tomato, and red onion.

Assembly

  • In individual bowls, layer a base of rice or quinoa, followed by the sliced chicken, chopped vegetables, and crumbled feta cheese on top.
  • Drizzle with tzatziki sauce and add any other desired toppings, then serve and enjoy!
