Instructions
Cooking the Quinoa
Rinse the quinoa to remove any bitterness, then combine 3/4 cup rinsed quinoa with 1 1/4 cups water in a saucepan.
Bring it to a simmer, cover, and cook until the water is absorbed, about 15 minutes.
Preparing the Peanut Sauce
While the quinoa simmers, prepare the peanut sauce and adjust the water to achieve your desired consistency for drizzling.
Chopping the Vegetables
Thinly slice or shred the red cabbage, grate the carrot, slice the red bell pepper, chop the green onions, and mix in the fresh cilantro in a large bowl.
