Ingredients

Salad Ingredients

  • 3/4 cup white quinoa Rinsed before cooking
  • 1 1/2 cups red cabbage Thinly sliced or shredded
  • 1 medium carrot Grated
  • 1 medium red bell pepper Sliced
  • 2 pieces green onions Chopped
  • 1/3 cup fresh cilantro
  • 1/2 cup cashews (or peanuts)

Peanut Sauce

  • 1 batch peanut sauce Adjust water for desired consistency

Instructions

Cooking the Quinoa

  • Rinse the quinoa to remove any bitterness, then combine 3/4 cup rinsed quinoa with 1 1/4 cups water in a saucepan.
  • Bring it to a simmer, cover, and cook until the water is absorbed, about 15 minutes.

Preparing the Peanut Sauce

  • While the quinoa simmers, prepare the peanut sauce and adjust the water to achieve your desired consistency for drizzling.

Chopping the Vegetables

  • Thinly slice or shred the red cabbage, grate the carrot, slice the red bell pepper, chop the green onions, and mix in the fresh cilantro in a large bowl.

Assembling the Salad

  • Once the quinoa has cooled, add it along with the nuts to the vegetable mixture.
  • Drizzle with the homemade peanut sauce and toss everything well to combine.
  • For an extra touch, add more nuts or cilantro on top.

Notes

Add a squeeze of fresh lime juice right before serving for bright flavors. This salad can be paired with grilled chicken or tofu for a complete meal.
