Preparation
Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
In a blender, combine the cottage cheese, rolled oats, eggs, honey or maple syrup, vanilla extract, baking powder, and salt until smooth.
Gently stir in the chocolate chips.
Baking
Pour the batter into the prepared muffin tin, filling each cup about 3/4 full.
Bake for 18-20 minutes or until a toothpick inserted comes out clean.
Allow cooling for a few minutes before transferring to a wire rack.
Notes
Store in an airtight container at room temperature for up to three days or freeze for longer storage. Reheat as necessary.
