  • 1 cup Cottage cheese
  • 1 cup Rolled oats
  • 2 pieces Eggs
  • 1/2 cup Chocolate chips
  • 1/4 cup Honey or maple syrup (optional) Use for sweetness; honey is traditional.
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Baking powder
  • 1 pinch Salt

Instructions

Preparation

  • Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  • In a blender, combine the cottage cheese, rolled oats, eggs, honey or maple syrup, vanilla extract, baking powder, and salt until smooth.
  • Gently stir in the chocolate chips.

Baking

  • Pour the batter into the prepared muffin tin, filling each cup about 3/4 full.
  • Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  • Allow cooling for a few minutes before transferring to a wire rack.

Notes

Store in an airtight container at room temperature for up to three days or freeze for longer storage. Reheat as necessary.
