  • 1 ripe mango, diced
  • 2 tablespoons toasted coconut

Instructions

Preparation

  • In a bowl, whisk together the coconut milk, chia seeds, honey or maple syrup (if using), and vanilla extract until well combined.
  • Let the mixture sit for about 5 minutes to help prevent clumping of the chia seeds.
  • After 5 minutes, whisk the mixture again to ensure even distribution of the chia seeds.
  • Cover the bowl and refrigerate for at least 2 hours or overnight for the best texture.
  • Once chilled, divide the pudding into bowls or cups and top with diced mango and toasted coconut.

Notes

Experiment with additional flavors by adding spices or different types of toppings. The pudding can be stored in an airtight container in the refrigerator for up to 5 days.
