Ingredients

For the crust

  • 1.5 cups 1 1/2 cups chocolate cookie crumbs
  • 0.25 cups 1/4 cup sugar
  • 0.5 cups 1/2 cup butter, melted

For the filling

  • 24 ounces 3 packages (8 ounces each) cream cheese, softened
  • 1 cup 1 cup sugar
  • 1 teaspoon 1 teaspoon vanilla extract
  • 3 large 3 large eggs

For the strawberry swirl

  • 1 cup 1 cup strawberries, pureed
  • 2 tablespoons 2 tablespoons cornstarch

Instructions

Preparation

  • Preheat the oven to 325°F (160°C) and grease a 9-inch springform pan.
  • In a mixing bowl, combine the chocolate cookie crumbs and sugar. Mix in the melted butter and press the mixture firmly into the base of the springform pan.
  • In a large bowl, beat the softened cream cheese until it’s smooth. Gradually incorporate the sugar and vanilla, mixing well, then add the eggs one at a time, blending thoroughly after each addition.
  • Divide the mixture in half. Stir the strawberry puree and cornstarch into one half, creating a vibrant pink batter.

Assembly

  • Pour half of the cream cheese batter over the crust. Carefully dollop the strawberry mixture on top, and swirl with a knife for aesthetic flair. Repeat with the remaining batters.

Baking

  • Bake in the preheated oven for about 60-70 minutes or until the center is set but still slightly jiggly.
  • Once baked, turn off the oven, crack the door open, and let the cheesecake cool inside for one hour.

Chilling

  • Refrigerate for at least 4 hours (or overnight) before serving for the best flavor and texture.

Notes

Store leftovers in the refrigerator in an airtight container for up to five days. For easy storage, freeze slices wrapped tightly in plastic wrap followed by aluminum foil, thawing in the refrigerator before serving.
