  • 1 large sweet potato Poke holes and bake
  • 2 slices bacon Cook until crispy and chop
  • 2 pieces eggs Cook to your preference
  • 1/2 cup shredded cheese Cheddar or your choice
  • Salt and pepper to taste
  • Olive oil or butter for frying

Instructions

Preparation

  • Preheat your oven to 400°F (200°C).
  • Wash the sweet potato and poke several holes in it with a fork.
  • Bake the sweet potato in the oven for about 45-60 minutes until tender.
  • While the sweet potato is baking, cook the bacon in a skillet over medium heat until crispy. Once done, remove and chop it into pieces.
  • In the same skillet, fry the eggs to your liking—sunny side up or scrambled work beautifully.

Assembly

  • When the sweet potato is ready, let it cool slightly, then slice it open and fluff the inside with a fork.
  • Top the sweet potato with the fried eggs, crispy bacon, and shredded cheese, adding salt and pepper to taste.
  • Serve warm and enjoy your hearty breakfast!

Notes

Feel free to substitute cheddar cheese with favorites like feta or pepper jack. Add greens, Greek yogurt, or chives for extra flavor and presentation. Store leftovers in an airtight container in the refrigerator for up to three days or freeze for up to a month without toppings.
