Ingredients

For the chicken and vegetables

  • 1 pound Chicken breast Cut into strips
  • 2 cups Mixed vegetables Such as bell peppers, carrots, and broccoli
  • 2 cups Rice White or brown, cooked according to package instructions

For the sauce

  • 1/2 cup Mayonnaise
  • 1/4 cup Sweet chili sauce
  • 1 tablespoon Sriracha Adjust to spice preference
  • 1 teaspoon Garlic powder
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Pepper

Instructions

Preparation

  • Cook the rice according to package instructions.
  • In a bowl, mix mayonnaise, sweet chili sauce, sriracha, garlic powder, salt, and pepper to create the sauce.

Cooking

  • In a skillet, cook the chicken until golden brown and cooked through; slice it into strips.
  • Stir-fry the mixed vegetables in the same skillet until tender.

Assembly

  • Assemble the bowl by placing rice at the bottom, followed by chicken and mixed vegetables.
  • Drizzle the creamy, spicy sauce over the top and serve.

Notes

You can sprinkle sesame seeds or chopped green onions on top for added flavor. Store leftovers in an airtight container and consume within three days.
